A native to Colorado Chef Kenneth Butlers earliest memories are from his grandparents’ house, perched over the counter watching them cook every meal from scratch. Surrounded by the greatest cook books and a large dining table, Ken was fascinated by idea of creating love filled meals from simple ingredients. Ken credits all of his culinary success and his love for food to his grandparents.
Ken’s culinary career spans over 17 years from the bottom of the ranks in the dish pit to creating signature nightly dishes as a lead cook, Ken has taken every opportunity that presents itself in order to gain more experience. From the mountains of Vail, Colorado to the beaches of Maui, Hawaii, Ken has moved steadily up the culinary ladder, from restaurants to resorts.
Ken’s approach to creating dishes is simple; highlight the main component of the meal by using fresh, sustainable and local products. Whether Ken chooses a classic and traditional technique or a modern approach to the dish, his goal is to highlight and respect the ingredients in the best possible way.
