Beet Salad and Smoked Goat Cheese Recipe
Ingredients:
4 Large Beets, washed, peeled and cut into thick slices
1/4 cup Olive Oil
2 tablespoons Balsamic Vinegar
2 tablespoons freshly squeezed Lemon Juice
Salt and Pepper, to taste
4 ounces of Smoked Goat Cheese, crumbled or cut into small cubes
2 cups Mixed Baby Greens
Instructions:
Preheat the oven to 375°F. Place the beets on a baking sheet lined with parchment paper. Drizzle the olive oil over the beets and sprinkle them with salt and pepper. Roast for 20 minutes or until they are tender when pierced with a fork. Remove from the oven and let cool for 10 minutes before assembling your salad.
While the beets are cooling, whisk together the balsamic vinegar and lemon juice in a large bowl to make a vinaigrette. Season with salt and pepper, to taste. Set aside while you assemble your salad.
To assemble your salad, arrange the baby greens on a platter or individual plates. Top with roasted beets slices and smoked goat cheese cubes or crumbles. Drizzle with your vinaigrette dressing just before serving. Enjoy!
