Colorado Pork Green Chili Recipe
Ingredients:
2 pounds of pork, cubed
1 large onion, chopped
4 cloves garlic, minced
3 jalapeno peppers, seeded and diced
4 Anaheim peppers, seeded and diced
2 tablespoons olive oil
6 cups chicken broth
1 (28 oz) can whole tomatoes, crushed by hand or in food processor (optional)
2 cups salsa verde (Green Salsa)
1 teaspoon cumin powder
1/2 teaspoon chili powder
1/4 teaspoon black pepper or to taste
Salt to taste (optional)
Instructions:
Heat the olive oil in a large saucepan over medium heat. Once hot add the onion and garlic, saute for 5 minutes or until lightly browned. Add the jalapeno and Anaheim peppers and continue to cook for another 5 minutes.
Add the cubed pork and stir fry for about 8 minutes or until the pork is cooked through.
Next add the chicken broth, tomatoes if using them, salsa verde, cumin powder, chili powder and black pepper. Give it a good stir and bring it up to a boil then reduce heat to low and simmer for 40 minutes stirring occasionally.
Taste the chili and adjust seasoning adding salt if desired or more spices as required. Simmer on low heat for another 10 minutes then remove from heat place lid on saucepan and let it rest for 15 minutes before serving warm with your favorite sides such as tortillas, rice or cornbread. Enjoy!
