East Coast Grinder

Grinder Sandwich Recipe


Ingredients:

• 1/2 lb. deli-sliced cooked ham

• 1/2 lb. deli-sliced turkey breast

• 4 slices provolone cheese or Swiss cheese

• 2 large hoagie rolls, sliced lengthwise but still attached at the bottom

• 1/4 cup mayonnaise

• 1 tablespoon Dijon mustard

• 1 teaspoon olive oil

• 1/4 cup pickled peppers, chopped (optional)

• 4 to 6 lettuce leaves, shredded

• 3 to 4 tomatoes, thinly sliced


Instructions:

Preheat your oven's broiler. Line a baking sheet with parchment paper and set aside.

Make the sandwiches by layering the ham, turkey, and cheese on one side of each hoagie roll. Spread mayonnaise and mustard in a thin layer over both sides of the rolls. Add a few drops of olive oil to each sandwich for extra flavor if desired.

Place each sandwich on the prepared baking sheet and place under preheated broiler for about 2 minutes until cheese is melted and bubbly, then flip sandwiches over and broil for an additional 2 minutes until cheese is melted and golden brown on top.

Transfer sandwiches to cutting board or plate when done cooking, then sprinkle chopped pickled peppers over one half of each sandwich if using them, followed by shredded lettuce and thinly sliced tomatoes. Top with remaining half of rolls to make two complete grinder sandwiches.
